Garlic Potatoes

I was nursing a headache on New Year’s Eve but luckily, I still managed to cook our NYE dinner for the four of us (grandma was with us).  The husband prepared the Christmas ham he bought at the grocery and he tossed a salad while I cooked my infamous Carbonara, fried cheese sticks and experimented a new dish, the recipe of which was shared by my elder sister.  It’s the Garlic Potatoes.  A very simple and easy recipe actually.  I made use of the baby potatoes we bought in heaps in Baguio.  I just phoned my sister and luckily, I have on hand the ingredients required.  I just boiled the potatoes, set them aside, melted butter, fried loads and loads of garlic, sprinkled salt and pepper then add the boiled potatoes.  For the dressing, I just prepared mayo, added a few cloves of garlic, vinegar, sugar and salt.  It was yummo!  I actually ran out of words to describe how delicious and tasty it was.  Save for the loads of butter used, it’s a healthy meal actually and will make you forget to research about diet pill that works.  Seeing the picture now makes me crave again for this dish.  We still have baby potatoes in the cupboard, let’s see if I find the mood later to whip this up again.
