A Background on Hand Pulled Noodles

Traveling to Asian countries can open one’s mind on the various dishes and delicacies that are new to your palette. Having a taste of these local foods is certainly an experience that should not be missed. On one of my travel adventures in Taiwan, I had the opportunity to witness how a hand pulled noodles are made. It was fascinating to see how it is being made.

Noodles are a staple in every authentic Chinese cuisine. Its history dates back between AD 25 and 220 during the East Han Dynasty. Now even with modern equipment that can make any process easier and faster, traditional Chinese chefs are still using the old method of manual labor in order to come up with the perfect textured noodles. A number of ingredients can be used but the most commonly used in restaurant and noodle houses are made with wheat flour.

Though it requires skills and years of practice, you can right at home using the basic ingredients such as: enriched flour, pastry flour, warm water and sesame oil. Combine all ingredients to make dough. The whole process involves twisting and stretching of the dough at about an arm’s length in order to create fine noodles. Do this repeatedly until you become more familiar with the process.
