August Baon Calendar

Most of the time, the husband brings a packed lunch with him to work.  Well, it’s actually practical and healthier compared to dining outside or in fast food restaurants near their workplace. 

I find this August “Baon” Calendar I saw from Yummy.ph brilliant and helpful.  I can get several ideas from here and this will also save me from wracking up my brains thinking of weekly baon for him.  The calendar is easy to look and refer to plus the menu for each day is correspondingly linked to its recipe.  Check it out at yummy.ph should you also need an August baon guide. :)

Sweet and Sour Tilapia

 

Sinipag ako magluto today..Sweet and Sour Tilapia for lunch..yum!

As I’ve mentioned before, I haven’t been cooking since I got pregnant because I can’t stand the heat and the pungent odor that comes along with this task.  The hormones also have to be blamed because I’m too lazy to hang around in the kitchen.  But lo and behold, I suddenly got the drive to cook one rainy day last week.  The husband specifically requested Escabeche or also known as Sweet and Sour Fish.  It’s my first time to try this so I had to research the recipe on the web and cooked with my cheat sheet mounted on the counter top for my reference.  Wish I had a movable stand like those Howard poc carts so I can freely move and cook with much ease.  As you know moving around with a ballooned belly is quite a hurdle.

Usually, Lapu-lapu or Grouper is used for this dish but we settled with Tilapia which I believe is much cheaper but equally tasty.

Ingredients:

  • 2 large whole tilapia fish
  • 1 medium chopped white onion
  • 1 thinly sliced carrot
  • 1/2 can pineapple chunk, reserve juice
  • 1 thinly sliced red bell pepper
  • Cilantro, divided, with leaves and stems, for garnish
  • 2 tablespoons soy sauce
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup water
  • Black pepper to taste
  • 5 cups cooking oil

Instructions:

  • Deep fry tilapia fish until golden brown and crisp. Drain tilapia on paper towel and place on a platter. Set aside.
  • Sauté garlic and onion until fragrant with the oil used for frying fish or use new, if desired.
  • Add carrot and pineapple chunks. Cover and simmer for 10 minutes over medium heat.
  • Pour in pineapple juice, soy sauce, water, flour, salt and sugar. Cover, simmer until thickens.
  • Add bell pepper. Again, cover and simmer for 1 minute.
  • Slowly pour the sauce mixture over fried tilapia. Top tilapia and sauce with fresh cilantro.
  • Serve with rice and enjoy Filipino Sweet and Sour Tilapia hot.
